Veggie-Stuffed Chicken Recipe
For the chicken:
1 whole chicken
2 tsp. vinegar
½ tsp. salt
3 tsp. garlic powder
1 tsp. ground cumin seed
1 tsp. ground coriander seed
For the stuffing:
1 ½ tsp. curry powder
juice of ½ lemon
3 medium potatoes
1 carrot
1 celery stalk
½ green pepper
½ to 1 whole onion
fresh thyme (optional)
Mix vinegar and dry spices in a bowl and rub onto the chicken. Let marinate for about two hours in a glass baking dish.
Peel the potatoes and chop them up like thick fries. Chop the carrot into 1/2-inch thick rounds. Chop the celery at the same thickness as the carrots. Chop the green pepper and onion into long strips. Mix the veggies with the lemon juice and curry powder. Stuff the chicken with the veggie mixture, along with a few sprigs fresh thyme, if using. Use toothpicks to close secure the chicken closed at both ends.
Bake in a 400-degree oven for about 25-30 minutes. Sadia’s family enjoys the chicken and veggies with rice or pasta, and of course Sadia’s Sauce.
